The good news is that you don’t need a return ticket to buy this travel insurance.
Under an Irish policy, you can commence your journey anywhere in the world with or without a ticket home (you must meet the Ireland Residential Eligibility criteria as outlined in the policy wording in order to buy a policy).
Be aware that:

The cost of your return ticket is considered part of any normal trip cost and therefore it isn’t covered under this policy. So if you must cut your trip short and return home to Ireland for a covered reason but you don't have a return ticket, there’s no cover to claim for any return ticket. The cost of an economy fare return ticket may be deducted from your overall claim in the event you are medically repatriated home.

The policy covers emergency overseas medical expenses only and will not cover you for general health checks or vaccinations required for the purposes of obtaining a visa.
The policy isn’t designed to cover everything. Take the time to read the terms, conditions, limitations and exclusions in the policy wording for full details on what is and isn’t covered especially the specific exclusions under all sections of the policy. That way there are no surprises if you need to use it.
